Crunchy Chicken Pieces

This is a perfect recipe from Jamie Oliver to use in your convection oven.

an image of Countertop%20Convection%20Ovens Countertop-Convection-Ovens_1398554527457.jpgIt’s easy to make, tastes great and can be adjusted to suit what you have in your fridge.  Don’t have mint and yoghurt, use eggs and marinate them in lemon and garlic.  Don’t have bread, use panko bread crumbs or store bought crackers.

Once you have the idea of how easy it is to make these, you can use any variations you have.

Mine are made by marinating for 1 hour in buttermilk, lime zest and garlic.  I didn’t have bread or breadcrumbs (my son ate the bread) so I used crackers to make the breadcrumbs and added in more lime zest, salt and pepper.  I crushed them in a food processor until they were fine.

Cook the chicken pieces for 15 minutes at 360 F / 180 C spraying them with Olive Oil and turning them at the 10 minute mark.  So I set my timer for 10 minutes and checked them.

I think you have to agree it looks pretty good and we really enjoyed them.  My son enjoyed his with Sweet Chili Sauce whilst I had mine with lime and a salad.
